    @Brian, or anybody else: I’ve been running out of gas after lunch for the last week. I’ve been super strict about the diet and sleep, and it just started this week. Any thoughts?

    Balsamic Chicken
    Take 3 chicken breasts and put them in a baking dish. Thinly coat the chicken in olive oil and then cover with as much minced garlic, rosemary, and pepper as you’d like. Bake at 400 for 20 minutes. Then pour 1/4 cup of balsamic vinegar over the chicken. I usually cut up the chicken and mix it in with salads.

    My spice rack has exploded since I started the challenge. I’ve been trying lots of different things I’ve never used before. Some to much success, and some not so much. Accidentally grabbed the wrong shaker one morning and had cinnamon flavored eggs. Not so good…

    @Steve if you’re running out of steam in the afternoons, try eating a small meal (including protein) between lunch and dinner even if you’re not super hungry.

    Endurolytes / lemon or lime in water may help too!

    My favorite meal so far is an Alton Brown method of cooking beef ribs for a beef stew. I’ve made both the stew, and just cooked the ribs.

    Went to La Union last night on Wilson Blvd. Very small, family owned, hole in the wall dirt cheap mexican restaurant. Got a Steak topped w/ two fried eggs & grilled onions, avocado and salad for $11. Definitely a great deal. Check it out.

    I found that duck breast is surprisingly affordable at the supermarket. I’ve been pan searing it to get that crispy skin that melts in your mouth and serving it with roasted vegetables. I’ve also discovered the versatility of herbs de provence. I sprinkle it on everything (eggs, squash, steak, etc.) to give it an extra savory flavor.

    Amazing in it’s simplicity.

    Take an avocado.
    Slice it in half.
    Remove pit.
    Sprinkle with salt and pepper.
    nom nom nom nom nom

    Seriously this never gets old.

    I haven’t found a favorite recipe, nor the time to experiment with food / prepare meals that take longer than 30 minutes, but my go to has been italian sausage, sauteed yellow and orange peppers, sauerkraut, and some mustard from TJ’s that I’m pretty confident is paleo. Makes my entire office jealous and I receive many “you can eat that on your diet?” To my response, “I’m not on a diet, I’m just not eating shit food anymore.” They still don’t get it, but I’ll win them over.

    I guess I am a pretty boring eater. I haven’t really been adding any spices or anything and just cooking meats in olive oil and mixing in veggies. After discovering that I can go to town on guac (the whole foods one with nothing but spices) and celery I’m tempted to experiment making my own. Other than that everything. Been drinking teas and experimenting with a coconut milk creamer in coffee (both unsweetened with no sugars) so that’s different.

    Question: Are water chestnuts paleo? I’m not even sure what they are – they don’t seem to be actual nuts, but they are cruchy and delicious.

    Week 2 of missing the town hall but will try and catch up on the podcast after the 7:30 WOD. I’ve been doing lots of yummy ground beef dishes. A recent fave has been meatballs in marinara sauce that I let marinate overnight in the slow cooker, accompanied with some spaghetti squash. I’ve also got a great Turkish Kofte recipe that I got from my mom and will post on the Tumblr site later :)

    On another note…..has anyone else been having some really wacky dreams?!?!?!? It’s not necessarily a good or bad thing, but both my fiancé and I have been having the oddest dreams since we’ve started the challenge and was wondering if anyone else was experiencing the same.

    I recommend just cutting two slits on either side of the can, it’ll keep in your fridge for quit a while.

    One thing I have noticed about sleep. I am sleeping better for the most part. I get tired earlier, around 8 and go to bed between 9 and 11. Just so much to do at night to get ready for the next day, but my wife says I have been talking in my sleep… ALOT! It is driving her nuts.

    She says it is more than before the Paleo diet. Hope she gets used to it, cuz I am not going back. Not much that is………………………….Milk………..
